Recipe of the Month

So when your USY friends stay the weekend at your house, you have an awesome home cooked meal to make them for Friday night! This recipe was excerpted from Vegetarian Times, and was in a special article titled healthier high holidays.

Noodle Kugel

Serves 12

6 oz. wide egg noodles

2 cups low-fat cottage cheese

1 cup low-fat plain yogurt

2 eggs and 2 egg whites

1 tsp. ground cinnamon

½ tsp. salt

1 cup raisins

4 apples peeled and cored

2 Tbs. unsalted butter

¼ cup sugar

½ cup breadcrumbs

1. Preheat oven to 350 degrees, coat a pan with cooking spray

2. Cook egg noodles in large pot of boiling salted water 4 to 5 minutes, or until tender. Drain.

3. Whisk cottage cheese, yogurt, egg, egg whites, cinnamon, and salt. Fold in egg noodles and raisins.

4. Quarter each apple. Then cut those slices smaller.

5. Melt butter in a skillet, add apples, sprinkle with sugar and cook 4 minutes without stirring. Flip apples over and then cook 4 minutes more, turn once or twice, then put the apples in the noodle mixture.

6. Spoon noodle mixture into baking dish and sprinkle with breadcrumbs, bake 40 minutes or until golden brown. Cool for 15 minutes, then slice and enjoy!
